SHELLEY — A local coffee shop has locals buzzing over exciting new coffee flavors, energy drinks, and more.
Heidi Robertson, owner of Rustic Rock Coffee in Shelley, says her business has been growing for the last three and a half years, and she has made loyal customers and friends for miles.
“We’ve been in Shelley for about three and a half years,” says Robertson. “We love everybody in our little town, they’ve helped support us and kept going this long.”
The amazing workers at the coffee shop were gracious enough to make four of their most popular and creative drinks for us to try.
First, we tried the Strawberry Horchata Chai, a white coffee with white chocolate, chai tea, and strawberry cold foam.

This drink was heavenly—it tasted like summertime in a cup. I especially loved the strawberry cold foam, and I thought the white coffee was a delicious alternative to what I would normally order.
“We try to see what’s going viral and all the fun, funky drinks,” said Robertson.
Speaking of going viral, next we tried the Dubai Chocolate Matcha.

If you haven’t seen the viral Dubai Chocolate bar, it’s been incredibly popular online. It consists of two pieces of chocolate encasing a pistachio-flavored, creamy inside—just like this delicious drink.
“We got a matcha with pistachio inside and a white chocolate cold foam with white chocolate drizzle,” says Robertson.
Third, we tried a blue lotus.

This drink was incredibly refreshing and tasted like I was drinking straight from a cantaloupe with a splash of cucumber and cream.
“It’s really pretty and fun, and it’s a plant-derived energy, which basically is a cleaner energy for you,” says Robertson. “You don’t have that crash, and it’s made of natural ingredients.”
Lastly, we tried the Salty Squirrel, a hot coffee that is perfect for when you need a sweet treat for your regular morning, or if you’re planning to cuddle up next to a cozy fireplace.

This drink is a white chocolate mocha with salted caramel, maple, and cinnamon.
“In this one, we have our Chapolera espresso. We just love Chapolera; they used to be in Idaho Falls, so we carry that tradition and order their beans in,” says Robertson. “It’s just such a rich, delicious flavor.”
Make sure to go get out Rustic Rock Coffee, located near Subway in Shelley at 580 North State Street.
They are open Monday-Friday from 6 a.m. to 5:30 p.m., Saturday from 7 a.m. to 3 p.m., and Sunday from 8 a.m. to 1 p.m.
